A dairy free coconut “butter” oil is mixed with low glycemic coconut sugar, organic cinnamon and rolled up into the dough to make a generous swirl of yumminess! A dairy free coconut milk mixture, of vanilla extract and coconut sugar is poured on top before baking. Topped with a dairy free cream cheese icing. Hi! I was diagnosed with an autoimmune disease in 2012 that set me on this trajectory to start to create bakes that my overloaded system would not react to! There were very few options on the market back in 2012 and if there were, they were limited and did not always taste great!
My diverse and neurodivergent family became my guinea pigs (largely my nieces and nephews) for many years as I baked and weeded out the good, the bad and the really bad creations lol. I am Aunt Janny to them. So this is one the inspirations behind Aunt Jannys!
