Sourdough Inspired means that it is free from the typical sourdough starter. Many times with sensitive bellies, fermentation does not sit well during the digestion process. The sourdough taste in my bread comes from the Apple Cider Vinegar. My bread is also baked in an airfryer oven with a steaming tray (just like typical sourdough) so as to crisp up the outside and soften the inside. Unfortunately as the bread cools, within 24 hours, the outside crust does lose its crispiness and becomes softer, differing from the normal sourdough bread crust. The life of gluten free baking!

Hi! I was diagnosed with an autoimmune disease in 2012 that set me on this trajectory to start to create bakes that my overloaded system would not react to! There were very few options on the market back in 2012 and if there were, they were limited and did not always taste great!
My diverse and neurodivergent family became my guinea pigs (largely my nieces and nephews) for many years as I baked and weeded out the good, the bad and the really bad creations lol. I am Aunt Janny to them. So this is one the inspirations behind Aunt Jannys!
